Ingredients for Creamy Mushroom Pasta
- 8 oz (225 g) pasta of any type including fettuccine, penne, spaghetti, or any other type.
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 medium onion, chopped and finely divided
- 3 cloves garlic, minced
- 10 oz (280 g) mushrooms, sliced in half (feel free to skip and use any cremini, button, or shiitake mushrooms)
- 1 cup / 240 ml heavy cream
- 1/2 cup (50 g) of freshly grated Parmesan cheese
- ¼ cup of chicken or vegetable broth.
- 1 teaspoon dried thyme, or 1 tablespoon fresh thyme
- Seasoning: salt and pepper to taste
- Chopped fresh parsley to garnish
Optional:
- Red pepper flakes, for a nice spicy kick
- Truffle oil, to enhance the luxury of the dish
Directions
- Cook the Pasta: First and foremost, in a big pot heat some water with a pinch of salt. When the pasta is cooked but still firm to the bite, drain it for use as per the package directions. Drain and set aside.
- Prepare the Sauce Base: Melt one tablespoon of butter and one tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and sauté until the onions are soft or tender, which should take around 3- 4 minutes. Incorporate the minced garlic into the saucepan and mix it for about 1-2 minutes until it becomes aromatic.
- Cook the Mushrooms: Put the slices of mushrooms into the skillet. Reduce the heat to medium then cook the mixture without stirring for 5-7 minutes until brown and the mushrooms are cooked.
- Make the Cream Sauce: Next, add chicken or vegetable stock to the pan stirring to collect all the brown bits. Let the liquid simmer for 2-3 minutes. Lower the heat to low and include the heavy cream as this is stirred well. Pull the sauce away from the heat briefly before returning it to the flame so that it can bubble gently and thicken a little for approximately five minutes.
- Add Cheese and Seasonings: Stir in the grated Parmesan cheese and mix well with the melted cheese and ingredients in the pan. Finally, stir in the dried thyme (or fresh thyme) that is used, together with the amount of salt and pepper preferred. Mention this and, if you would, incorporate a red pepper flake for spiciness – no more than a pinch.
- Combine Pasta and Sauce: Now, add the prepared pasta into the skillet and ensure that it gets nicely coated by the creamy mushroom sauce. Stir for 2-3 minutes longer, to bring all the components to the ideal consistency and for the spices to blend through the vegetables well.
- Finish: The pasta needs to be served hence remove the plate from the heat and put the pasta onto the plates. Alternatively, garnish with finely chopped parsley and lastly, a few drops of truffle oil for a Ten definition of this Italian favorite.
